From what I've heard most other Noahides have converted from Christianity, but has anyone else formerly been an atheist?

You do know that, since the Seven Laws are prohibitions, there is no positive commandment for a non-Jew to believe in Hashem. An atheist can be a Noahide, according to Jewish Law.
